DID YOU KNOW: WHERE THE ORIGIN OF SHRIMP TEMPURA?

Bởi Meksea-Hien - June 6, 2025

Tempura, known for its delicate, crispy texture and expertly fried ingredients, has become an iconic dish within Japanese cuisine. Today, shrimp tempura in particular stands out as a favorite among both Japanese diners and international food enthusiasts. However, few realize that this beloved dish has origins that extend far beyond Japan. The story of tempura is one of cultural exchange, adaptation, and refinement which is an example of how culinary traditions can evolve through global influences.

1. Trace back to the time

Contrary to common belief, tempura did not originate in Japan. The technique of deep-frying food in batter was introduced to Japan in the 16th century by Portuguese missionaries and traders who arrived in the port city of Nagasaki. At the time, Nagasaki served as a vital center for trade and cultural interaction during Japan’s Edo period. The Portuguese were known for preparing fried fish, especially during the Christian observance of Lent, a time when meat consumption was restricted. The term “tempura” is believed to have derived from the Latin word tempora, referencing these fasting days.

The Japanese quickly adopted and adapted the Portuguese frying method, incorporating it into their culinary practices. As an island nation with abundant access to fresh seafood and seasonal vegetables, Japan began applying this technique to local ingredients. Over time, the Japanese refined the batter. They use a mixture of flour, cold water, and occasionally egg to achieve the signature lightness and crispness now associated with traditional tempura. Among the many variations, shrimp tempura became especially popular for its firm yet tender texture and naturally sweet flavor, which pairs well with the delicate batter.

2. Tempura in the morden

In contemporary Japanese cuisine, tempura has secured its place as both an everyday comfort food and a gourmet specialty. It can be served as a standalone dish, placed atop rice in tendon bowls, or paired with soba and udon noodles. In fine dining settings, tempura is prepared with meticulous care—emphasizing the freshness of the ingredients, precision in knife work, and mastery of frying techniques. Shrimp tempura, in particular, is often regarded as a benchmark of a chef’s skill due to the delicate balance required between maintaining the shrimp’s juiciness and achieving a crisp, non-greasy coating.
